An email from Graham Eddy suggested that this James is the son of James EDDY and Elizabeth DAVY, but I believe this is unlikely since James and Elizabeth married in 1795 and James was born before then. According to the 1841 census, James was aged 55, which was rounded down to the nearest 5, so he was born 1786-1782.

Checking the baptism registers for entries that could tally with the above birth years, gives these 2: (a) James EDDY, son of James EDDY & Loveday, 05 Nov 1786 St Just in Penwith (b) James EDDY, son of James EDDY & Elizabeth, 11 Dec 1785 Sithney

Ignoring (b) due to location... I believe (a) is the correct set of parents.
