If son James's parents were John and Mary, there are 2 possible marriages before James's baptism on 05 Jan 1772 for a John EDDY and a Mary: (a) John EDDY and Mary GROSE, 01 Jan 1766, St Just in Penwith (b) John EDDY and Mary HODGE, 01 Jan 1770, Madron

Although I can't yet eliminate (b), based on location, (a) is the more appropriate. This concurs with other genealogists (Colin Thomas and Geoff McKee to name two), which I'll go along with until proven otherwise.

Looking for children born to John EDDY and Mary GROSE is complicated as there were other John and Mary couples. The couple before were married 16 Nov 1740 in Madron, so were unlikely to still be having children after 1766. But, as well as (b) above, there was also a marriage (c) between John EDDY and Mary WILLIAMS, 2 Nov 1772, St Just in Penwith.

There were many children baptised to a John and Mary, but only one, John, 03 Nov 1767, St Just in Penwith, is after marriage (a) but before (b) and (c). Other children baptised to John and Mary before 1800 (all in St Just in Penwith), that could possibly belong to this couple are: 1. Based on date and location, James baptised 5 Jan 1772 has been attributed to this couple. Also, given that Mary GROSE's mother was called Alice, the two Alices have also been attributed as the first one was buried 1785. William baptised 4 Nov 1776 has also been attributed to this couple (concurring with Geoff McKee) based on his name being in this family, but especially because of the naming pattern of his children (e.g. Alice).

Susanna (6) and Peter (11) have been attributed to John Eddy and Mary Williams.

Assuming John was at least 18 when married, possible baptisms before 1748 are the son of: (A) Peter EDY & Jane, 18 Apr 1730, St Just in Penwith (B) John EDDY, 9 May 1739, St Just in Penwith (C) William EDDY & Bridget, 5 Nov 1741, St Just in Penwith

Once again, although I can't yet eliminate (A) and (C), data from Colin Thomas and Geoff McKee suggests (B) is the correct baptism, which I'll go along with until proven otherwise. One thing that backs up the choice of (B) is that a witness to John EDDY and Mary GROSE's marriage was another John EDDY, who would probably have been his father (although, I suppose, an uncle would be another possibility but less likely if the father was still alive).
